Spicy Taco Pasta 🌶️
This recipe is one of those super easy week night staples that can be thrown together super last minute with whatever you have in your fridge & pantry!
Feel free to make this recipe your own by tweaking the ingredients to your liking and for whatever you have on hand 🤎
You can use whatever kind of meat you want, any shape of pasta you want, and so on 😌

Ingredients:
1/2 red onion, chopped
1-2 bell peppers depending on size (I used about 1.5 cups all together), chopped
2 cloves garlic, minced
Olive oil
Precooked chicken (you could sub for beef, turkey, or whatever protein you like), cubed or shredded
1 packet fajita seasoning
2 cans of Rotel diced tomatoes & green chilies
1 can of corn
Broth of your choice, I used bone broth
Fairlife FF milk
Whipped cream cheese
Mexican blend cheese, or whatever you have on hand
Salt & pepper to taste
Extra taco seasoning (optional)
Red pepper flakes (optional)
Directions:
Cook your chicken (or protein of choice) first. If going with chicken, make sure to season it well with your favorite spices or with some taco seasoning before cooking it until the internal temp is 165℉. Dice or shred it and set aside.
Prep all of your veggies next. Dice your onion & bell peppers, and mince your garlic.
Preheat your pan on medium heat. Once hot, add about 1-2 Tbsp of olive oil to the pan and then add in your onion. Sauté until the onion starts to soften, then add in your bell peppers and garlic. Let all that cook together for a few more minutes before adding your chicken.
Add in the fajita packet and mix that well into your chicken & veggies.
Next, add in your tomatoes, chilies, & corn, stir— then add the dry pasta, broth, and milk. Stir everything together really well before adding a big dollop of whipped cream cheese
Cover & simmer until the pasta is almost fully cooked (time depends on your chosen pasta, just make sure to check it often), adding more liquid if needed
Once the pasta is almost fully cooked, remove from heat & add in your cheeses + extra seasonings.
Put the lid back on for a few minutes to let the cheese melt, give everything a good mix and it’s ready to ENJOY! 😍🌮🌶️
