Zesty Summer Pasta Salad ☀️
This is another one of those staple recipes that I grew up eating because my mom made it for us all the time! It’s always the perfect side or snack to have on hot days because you can just pull it right out of the fridge and dish up! A lil zesty & refreshing 😋
It comes together very easily and is completely customizable, so feel free to add or subtract any ingredients you want to make it your own 🫶
Ingredients:
Tricolor pasta
1 bottle Italian dressing
Yellow & red peppers chopped (about 1 1/2 cup total)
Chopped carrots (as much as you want)
One container feta crumbled
Chopped raw broccoli (as much as you like)
Mini pepperoni
Directions:
Cook the pasta according to the package instructions or until it’s slightly under done.
While the pasta is cooking, chop up all your vegetables & pepperoni and put in a bowl. Pour the Italian dressing over top and mix well.
Add in your cheese— you can absolutely use any other kind of cheese cut up into cubes that you like as well, sharp cheddar is delicious and so is colby jack!
As soon as your pasta is cooked, drain and rinse with cold water immediately to stop it from cooking further.
Mix the cold pasta into the rest of the salad and then refrigerate for a few hours to overnight (it taste better after it all blends together for a day).
Lots of times I don't add the broccoli until I'm ready to eat it because it will get a little bit mushy! Raw cauliflower is good in it as well, it's literally whatever vegetables you want or have on hand. So DELISH 😋
