Pumpkin Protein Balls 🎃
These have been my go-to protein snack for the last few weeks now! 🎃
They’re super easy to make, are high in protein, and you can easily grab them when you’re rushing out of the house or just on the go 👏
You will need:
2 cups quick oats
1 cup Clean Simple Eats peanut butter
¼ cup honey
2 scoops CSE pumpkin pie protein powder
As many chocolate chips as you want
¼ cup pumpkin puree
LOTS of pumpkin pie spice (season with your heart)
Flaky salt sprinkled on top of each ball
I like to use the Clean Simple Eats peanut butter and pumpkin pie protein powder, but feel free to use whatever flavors you like and whatever you have on hand! 😌
Instructions:
Mix everything in a bowl until it comes together and there’s no dry bits at the bottom of the bowl— it will be pretty sticky. I recommend mixing all of your soft/liquid ingredients together first, and then adding the dry ingredients last (it just makes everything easier to mix together).
Using a spoon or your hand, form your mixture into bite sized balls and place on a piece of parchment paper
Sprinkle a little flaky salt on top of each ball, then pop in the fridge or freezer to set.
