Scotcheroos aka Special K Bars 🍫

Some people call these Special K bars, but I’ve always known them as Scotcheroos 🤎

They’re one of my favorite desserts of all time! It’s a Midwest staple I grew up LOVING & I could eat the entire pan 🙈

So easy to make & is guaranteed to be a crowd pleaser at get togethers all year long! 🤌

I always grew up having scotcheroos that were made with Special K cereal, but I know it’s common for them to be made with Rice Krispies or Crispix as well! Feel free to use whatever cereal you want to make these however you like ✨


Ingredients:

•1 cup sugar
•1 cup Karo light corn syrup
•1 cup peanut butter
•6 cups Special K cereal (or Rice Krispies, Crispix, etc.)
•1 bag semi sweet chocolate chips
•1 bag butterscotch chips
•Sprinkles (optional)

Directions:

Combine sugar + corn syrup & either melt it on the stovetop on low heat or microwave for 90 ish seconds until JUST melted! Stir stir stir.

Important note on heating the sugar mixture: It’s really important to not overheat the sugar & corn syrup mixture or it will start to caramelize and become really hard (which can result in bars that are hard as a rock)! So make sure to watch it very closely and remove it from the heat as soon as the sugar is fully melted into the syrup!

Once your sugar & syrup mixture is ready, add in your peanut butter & mix really well until everything is well combined.

The mixture should be hot enough to melt the peanut butter as is, but if the peanut butter doesn’t fully melt into the mixture microwave until melted in 20 ish second increments.

Once you have your peanut butter mixture completely combined, add in your cereal!

Mix really well & pour into greased 9x13 pan and PAT down into pan. Set aside.

Combine both chocolate & butterscotch chips into a bowl & microwave to melt for 2-3 ish minutes in 30-40 second increments. Watch closely and stir every time you check on it!

Once that’s nice and melted & mixed, pour and spread over bars!

If you want to add sprinkles, add them while the chocolate topping is still soft so that they stick to the bars once they’re set!

Then just let it all SIT at room temp to harden up! I suggest a few hours so they are truly hard. SO.GOOD 😍👏🏼
